Masala Vada, also known as Masala Vadai or Paruppu Vadai, is a beloved South Indian snack made from chana dal (bengal gram) and a blend of aromatic spices. Popular as a street food and a homemade treat, it's often enjoyed during tea time. Rich in nutrients like vitamin D, selenium, beta carotene, lutein, and especially vitamin E, Masala Vada is both flavorful and healthy.To make Masala Vada, start by soaking chana dal for two hours. Set aside a small portion of the soaked dal and grind the rest along with fennel seeds, cinnamon, cloves, red chilies, and salt into a coarse mixture. Add the reserved dal, along with finely chopped onions, garlic, ginger, green chilies, curry leaves, and coriander leaves. Mix well and shape the mixture into small patties or vadas.Fry the vadas in hot oil until they turn golden brown, then drain on paper towels. Garnish with fried curry leaves and serve hot with coconut chutney and a steaming cup of tea for a perfect snack experience.
